Two Michelin stars, ranked number 3 on “The World’s 50 Best” and owner-chef of the first French restaurant on this prestigious list, Mauro Colagreco has also just published Mirazur with Ducasse Editions. In Menton on the Riviera, the Argentine-Italian chef cultivates his vegetable garden and his cuisine in his incredible restaurant, overlooking the Mediterranean, somewhere between sky and sea, appropriately named Mirazur.

What’s your link to the Côte d'Azur?

During a 2002 trip to southern Italy for vacation I unknowingly passed in front of the Mirazur restaurant.


At the time I thought the road was magnificent, even magical…


What brought you to Menton?


I was looking for a new restaurant project and one day while dining with friends they talked about this extraordinary place that had been closed down for several years.


I was hooked and they organized a meeting with the owner.


How does the place inspire your cuisine?


This magnificent region between Italy and France has a microclimate that’s perfect for a vegetable garden.


Fresh seafood fished daily by artisan fishermen, local products from the hills…


Inspiration can be found everywhere. I work with fresh seasonal produce as well as the best ingredients found on the market.

What’s your favorite regional product?


I love tomatoes and grow several varieties in my garden.My favorite is the Gamberoni from San Remo, either prepared raw as a carpaccio with a Menton lemon vinaigrette or grilled over a wood fire and served with a meadowsweet mayonnaise…

Any projects for 2018?

Gardening! It’s essential if you want to have good produce for great cuisine.


I invest a lot of time and effort in my vegetable garden and am convinced that the future of great cooking is having fresh organic produce that’s picked daily just before serving.

For a well-cooked local meal

“Prospère” is the name of a fishing boat in the port of Menton and the restaurant Le Petit Port that’s just across the street from it.
